Blondies

For me this has been a recipe that has been on the to do list for a long time. I don't know how many seasons ago I had planned for this to be a part of, but it’s been a while. 

I can now finally say I did do this recipe, and it was simple and easy for me to get around. Only a few ingredients, and simple and easy to follow instructions. It is no wonder not one of these were left on the serving plate when I took them to work. 

Ingredients

flour (210g)

1 teaspoon baking powder

¼ teaspoon baking soda

¾ teaspoon salt

light brown sugar (220g)

Melted butter (113g)

1 large egg room temperature

2 teaspoons vanilla extract

white chocolate chips (180g)




Instructions

Grease and line a baking tray, and pre-heat the oven at 180. 

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large mixing bowl, whisk to combine the brown sugar and melted butter. Add the egg, and vanilla and whisk vigorously until the mixture is thick and well combined

Add the dry mixture to the wet mixture and stir together with a spatula until almost combined. Add 100g of chocolate chips  and stir until they are well distributed.

Transfer the dough to the prepared baking pan and spread into an even layer. Press the remaining chocolate chips on the top.

Bake for 32 to 36 minutes or until the edges are set and golden brown and a toothpick inserted into the centre comes out clean. Let the cookie bars cool completely in the pan before cutting.

My experience

Hand folding in the flour was a bit of a struggle, but it was worth it. It gave me a little bit of extra work out. 

I feel like my oven baked them a little too dark in places, giving them a little bit of a darker look. Which is why next time I will try a lower temperature. I feel it will give it a golden look rather than the dark one I got. 

Now with how simple this recipe is, I can wait to experiment with it. Next I am going to add in chocolate M&Ms or smarties to help add a new crunch to the dough. 

Overall, I think if you would like a nice little treat to bring to a bake sale, and don't have time to make some brownies, I think this would be one for you to give a go.  Like Many this isn’t my recipe just what I tired and it worked out really well.
